BRIEF PRESENTATION
The Laboratory of Food Processing and Engineering of Aristotle University of Thessaloniki (A.U.TH.) functioned as a regular Center for Agricultural Technology under Law 3577/1928 and belonged to the Department of Agriculture of the School of Physical and Mathematical Sciences. It became an Agricultural Technology Laboratory with RD 413/1971. In the year 1982 the laboratory joined the Department of Agriculture of the Faculty of Geotechnical Sciences and in the year 1999 it was renamed as Laboratory of Food Processing and Engineering of the Department of Food Science and Technology. The Laboratory’s subject is food processing and preservation, plant and animal product technologies, oenology and alcoholic beverages, biotechnology and food engineering. The fields of research activity for meat technology are the development of technology for the production of meat products with low content of fat and added substances, the applications of protective crops and starter crops in the production and preservation of meat products and the improvement of the quality of traditional meat products. The fields of research activity for food biotechnology are the utilization of by-products of agricultural industries, the production of organic acids, polysaccharides, enzymes, vitamins and carotenoid substances using microorganisms, the study of various fermentation systems for the production of products with application in food technology and the study mathematical models during the production of products by microorganisms in bioreactors. The fields of research activity for food engineering are the study of transport phenomena in natural processes with the aim of better understanding and their correct control, the development of new minimized processing schemes with the aim of improving quality and performance, simplifying processing, minimizing investment and processing costs, fluid processing with membrane technology for efficient liquid food condensation and effective treatment of difficult wastes, adaptation of traditional product technology to industrial processing schemes, and design and development of prototype food processing equipment at pilot and pre-industrial scale . The fields of research activity for fruit and vegetable processing technology are fresh-cut fruit and vegetable technology (postharvest treatments – quality, shelf life), the effects of heat treatment and low-oxygen treatment of fruit and vegetables on color change, antioxidant capacity and quality of final products, authenticity and antioxidant capacity of olive oil and the study of traditional foods with fruit and vegetables as raw material.
ROLE IN PROJECT IMPLEMENTATION
The Laboratory of Food Processing and Engineering of Aristotle University of Thessaloniki (A.U.TH.) cooperates with the Producers Vaeni Agricultural Viticultural Winemaking Co-Operation Of Naoussa and Jardel Christiane – Petit Oeneonas in wine products, with Kiato Union IKE in raisins, with Agricultural Cooperative of Olive Oil Producers of the Municipality of Kantanos Selinos in olive oil and olive products, with Agricultural Cooperative of Production-Elaboration-Trading of Garlic Vissas in garlic and with Agricultural Beekeeping Cooperative of Nikiti Chalkidiki in pine honey. It analyzes the data related to the batching process that is followed during the standardization of the above products and the annual production programs of the respective Producer Bodies, in order to precisely determine the products’ sampling rate. The laboratory also receives the samples, performs the appropriate analyzes and evaluates their results. In addition, it prepares the publication texts and participates in conferences-workshops for the dissemination of the results. Finally, it provides to the ANTIOXCERT website new data.
